  • 3/4 cup of fresh strawberries, sliced in half
  • 1 1/2 cups all-purpose flour
  • 1 teaspoon baking powder
  • 1/4 teaspoon salt
  • 1/4 cup milk
  • 1/2 cup unsalted butter
  • 1 cup sugar
  • 1 large egg
  • 2 large egg whites
  • 1 teaspoon vanilla (optional)

How to make the best strawberry cupcakes from scratch. Not everyone is Betty Croker, however, with this recipe you will come extremely close. Preparation is most important, especially when you are dealing with food. The first step in the preparation process is to preheat the oven to 350°. The second step is to take twelve cupcake liners, preferably pink to match the theme, and place them in a muffin pan. The third and final step in the preparation process is to cut the strawberries in half.

Once you have finished the preparation steps, take out a medium sized bowl and put in the all-purpose flour, baking powder and salt. Once you have finished mixing those places that bowl aside, to start the next step. Take out your food processor and the cup of fresh strawberries. Process the strawberries until they are pureed. Once that is finished, empty the pureed strawberries into a 1/3c measuring cup and once again, place this aside. Using an electric mixer with bowl, cream the unsalted butter on medium to high speed for about 2 minutes, or until the butter is lightly fluffy. Gradually add the sugar to the same bowl, and mix until it is well blended. Add the egg and egg whites into the same bowl, on low speed. Add vanilla extract, if you would like, and place this bowl to the side. In a separate, smaller mixing bowl, mix the milk with the 1/3c strawberry puree. Bring back the electric mixer with bowl, and alternate the flour and milk mixture on slow speed.

Make sure to scrap down the sides of the bowl to make sure everything is blended together. Once you are done with that, and your oven is ready, place the cupcakes into the oven for 20-25 minutes or until they are lightly browned. After that is finished allow them to cool, apply desirable frosting and enjoy!
